Eggs and Rice, AKA my all-time favourite comfort food.
I love how comfort food varies for everyone, the list goes from chicken pot pie to dumplings, but all the amazing foods share something so special, a little feeling of coziness. For me, that feeling stems from basmati rice, with a fried egg so the yolk in the middle is still the slightest bit runny, topped off with some sriracha and mayo, and maybe some avocado if it was a lucky day. A meal I could never get bored of. Every time I make myself rice and eggs it reminds me of being at home, cause as far as I remember it is the first simple meal I taught my 8-year-old self to make. The rice and eggs had me smiling. I straight up smiled at a bowl of rice and eggs.

I can’t say I'm much of a homebody, but living by myself in Vancouver for May and June in a brand new apartment felt a little lonely at times. But cracking an egg over some sizzling sesame oil always put me in a good mood. And for a couple of seconds, it made me feel like I teleported back to my parent's kitchen in little miss Ontario, with my parents politely yelling at me to turn on the Vent hood cause the house was starting to smell very eggy. But the yells that are involved in making the rice and eggs help make the dish extra yummy in my personal opinion.
Anyways, I guess what I am trying to say is that I think comfort foods are so very special. I think we all have that special meal that forever holds a special place, because it has a distinct memory attached to it. Whether it reminds you of a place, a person, or a funny story. I also think most comfort foods lack colour, they all seem to be a variation of beige, but I guess beige is classic, so it's valid. My rice and eggs typically don't look the most appetizing, but they for sure hit the spot.
That's all I have to say about rice and eggs, for now, but enjoy your day and maybe crack an egg too! And don’t forget the sriracha :)
